DOM PERIGNON

Moët & Chandon - Champagne

Founded in 1743 by Claude Moët, merchant and wine commissioner, who was friends with Dom Pierre Perignon in Hautvillers Abbey, the famous Benedictine monk considered the spiritual father of the sparkling beverage. He was succeeded by his son Claude-Louis-Nicolas and his grandson Jean-Remy-Moët who was a memorable figure who toured the routes of the world and opened European markets. In 1832 Jean-Remy ceded the post to his son Victor Moët and his son-in-law Pierre-Gabriel-Chandon who dedicated himself to the reconstruction of the former Benedictine abbey of Hautvillers and from this time, the company is called Moët & Chandon, sealing a alliance that awaited a long glory in the whole world.

Varieties: Chardonnay and Pinot Noir.

True to the ambition that housed Dom Pierre Perignon at the end of the seventeenth century, Cave Chef Richard Geoffroy continues to cultivate the demand for the exceptional: only a unique harvest justifies the creation of a new Dom Perignon, since there is no more Dom Perignon than the Dom Perignon Vintage. The 2004 vintage will be remembered in the history of Dom Pérignon for its wealth and generosity. In contrast to the previous year, the development of the vineyard was regular and progressed without incident, resulting in notable clusters in number and size. While the weather remained moderate for a long period - even with rather cool temperatures in the month of August - it was the dry heat of the weeks before the harvest that determined the vintage. The harvest began on September 24; The grapes showed extraordinary maturity and health. On the nose, the wine is full of life; Almond and cocoa powder are progressively mixed with white fruits and dried flowers. The classic roasting notes end up completing the set by signing a beautiful maturity. In the mouth, the wine is placed on the edge in an instantaneous and surprising way, oscillating between the density and the almost weightless lightness. The precision is extreme, tactile, bleak and without rough edges. The set persists with a sublime class on a sap, spicy note.

Pairing: Risottos, White meat, Fruit desserts, Tempura, Acorn-fed Iberian Ham.

Serving temperature: Serve between 8 and 9ºC.
