Lomo cane from Iberian trunk pigs from Joselito's own cabin. The Caña de Lomo is made during the winter months, after the montanera period. After the Joselito Loin Cane drowns in natural oak wood fireplaces, it goes through a natural healing process of more than 6 months in the Joselito dryers.

The Caña de Lomo has a reddish appearance of different shades, from the intense red plum, through the carmine to a dull vermilion that is combined with the unequivocal sign of juiciness that provides the fine fat edging; white lines that intermingle to give rise to a piece of immense flavor and fragrant aroma. A totally natural food, without preservatives or additives, that will provide health for its high protein value to a healthy and balanced diet.
