ELABORATION AND FERMENTATION

Bleeding at low temperature and in contact with carbonic snow. Maceration for 3-4 hours and bleeding in a traditional way. Alcoholic fermentation of clean must, varying the temperature in order to reach the primary aromas of the grape.
